Prawn Tacos with Lime-Avocado Salsa Recipe

 

CHIEF TIPS

Cooking Tip: As the season gets hotter we find a lot of people feel like eating less. This is the perfect time to start making more smoothies or mix and matching your food. Say fruit and nuts for your carbs and fats prepared as a fruit salad and then a protein shake on the side. It's lighter and more refreshing then a cooked meal but you can still get your required macronutrients for that meal.

Training Tip: Do you ever feel like your not getting to work on certain movements or skills enough? Try choosing a skill a week to work on. Every day for that week spend 5-10 mins before or after class working on that movement. Unsure of what to do for that exercise? Hit up your coach... They'll be stoked to help you further your skills! For example, Toes to bar.
Day 1 : 3x15 Kipping swings
Day 2: 3x15 V-ups
Day 3: 5x5 Toe to bar attempts
Day 4: 3x5 Candle stick lowers
Day 5: 5x10 Strict knee raises (or toes to bar)

Mindset Tip: Let go of the stuff that's not important. If you feel yourself coming back to thoughts that do not serve you, take your attention towards something that brings you joy, happiness or is of importance to you.

 

RECIPE OF THE WEEK

Prawn Tacos with Lime-Avocado Salsa

For a quick 30-minute meal, load fresh tortilla wraps with Mexican-spiced prawns, cabbage, radish, lime-avocado salsa and smoky mayo.

We'd recommend corn tortilla's over flour!

 

 

Ingredients:

  • 1 just-ripe avocado, stoned, peeled, finely chopped
  • 1/4 cup finely chopped coriander
  • 1 red birdseye chilli (optional), seeded, finely chopped
  • 2 1/2 tablespoon lime juice
  • 1kg Raw Deli Prawns Thawed, peeled leaving tails intact, deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Mexican seasoning
  • 12 small flour tortillas
  • 1/2 cup (150g) mayonnaise
  • 1 teaspoon smoked paprika
  • 1/4 red cabbage, finely shredded
  • 1 carrot, peeled, cut into matchsticks
  • 2 radishes, thinly sliced

 

Instructions:

Step 1 - Combine the avocado, coriander, chilli, if using, and 1 1/2 tablespoons of the lime juice in a bowl. Season. Set aside for 10 mins to develop the flavours.

Step 2 - Combine the prawns, oil and Mexican seasoning in a medium bowl. Heat a large frying pan over high heat. Cook the prawns, turning, for 5 mins or until prawns change colour and curl.

Step 3 - Meanwhile, heat the tortillas following packet directions.

Step 4 - Combine mayonnaise, paprika and remaining lime juice in a bowl. Season.

Step 5 - Divide tortillas among serving plates. Divide cabbage, carrot, radish and lime-avocado salsa among the tortillas. Top with the prawns. Drizzle with the mayonnaise mixture. Fold to enclose the filling. Serve immediately.
